I got this recipe from my not quite mother in law (long story). These are the best potatoes I have ever tasted.
Potatoes (same number you'd use for mashed potatoes)
Butter (half cup, maybe... i don't measure)
1/2 block of velveeta cheese
1. Peel and cut potatoes as if you were making mashed potatoes
2. Boil potatoes (like making mashed potatoes), until soft
3. Add butter
4. Add Velveeta cut into small chunks and mix over a warm burner until it is all mixed. It doesn't have to be as smooth as mashed potaotes
This is so yummy. My husband called the not quite mother in law and told him that I made it so good, that he thought of her. He was impressed. Lil John loves anything with cheese.
