This recipe was Granny's. I grew up with it being made by my grandma for my grandpa for his birthday every year.
2 c. flour
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 tsp cinnamon
2 c. sugar
1 1/2 c oil
4 eggs
2 c. grated carrots
8 1/2 oz can crushed pineapple (drained) OR 1 c. apple toppings (cut apples finely)
1/2 c. chopped nuts (optional)
1. Preheat oven to 350*
Note: bake at 325* if using a pyrex pan
2. Sift flour, baking powder, baking soda, salt, cinnamon, and sugar
3. Add oil and eggs. Mix well
4. Add carrots, drained pineapple (or apple) and nuts
5. Bake in a greased and floured pan (9x13) for 33 to 40 min until done
6. Let cool
Frosting
1/2 cube (1/4 c.) butter or margarine
8 oz pkg of cream cheese
1 tsp vanilla
1 lb powdered sugar
1. Mix all together til smooth
2. Frost cooled cake
