I found this recipe on allrecipes.com and changed it up. This is the link to the original recipe http://allrecipes.com/Recipe/Famous-Butter-Chicken/Detail.aspx.
2 eggs (beaten)
1 pkg Ritz Crackers
1/2 c. bread crumbs
garlic powder
onion powder
celery salt
pepper
2lbs boneless skinless chicken breasts
1/3 c. butter (melted)
1. Preheat oven to 375*
2. Beat eggs in bowl. Place Ritz crackers, bread crumbs, and seasonings in separate bowl.
3. Dip chicken in egg bowl coating entire breast. Then dip breast in cracker/crumb mixture and place in baking pan (9x13).
4. Pour melted butter over top of chicken and in pan.
5. Bake in preheated oven for 30 minutes.
I have used this same recipe for boneless pork chops and it turned out well. My family loves this dish. Whenever I make it, both my son and husband are happy people. Hope you enjoy this meal as much as we do.
Works well with alfredo sauce and pasta and a green vegetable of choice or pork and beans.
